I have my stove's burn indicator on top center of stove (no room for one on pipe. It feeds right up chimney). Of course when I turn my fan/ blower on the reading drops. The air is forced out vents on top front of stove. Obviously turn off fan and reading goes back up.
Sometimes the indicator drops by 100*

Is the stove actually hotter than the indicator reads when fan is on, or is the fan reducing the stove temp that much.
Ive been assuming the stove is still hotter than indicator.

well I would assume the outer skin temp is dropping as seen. The inner skin and inside of stove is a different matter.

I'd say yes the stove top temp is actually higher than indicated by the thermometer with the fan on. You could verify this with an infrared thermometer as it won't be affected by the airflow and will give you an accurate STT with the fan on or off.
