IMG_3291.JPG IMG_3290.JPG I made some venison steaks tonight on the Traeger. These were the best I have personally ever made, steak or venison. Started with a rump roast and cut into small steaks, rolled the steaks in a dry rub my wife made and wrapped it up in some thick cut peppered bacon. Cooked perfect to a medium rare and enjoyed!

My wife puts steak sauce on everything and she didn't even get the sauce out for these.

I've done them like this before but the dry rub we used on this one made a big difference

What kinda of dry rub? Sweet... Hot....? I typically just use Montreal Steak Seasoning.... May have to try some rub next time... Do you soak yours in Buttermilk before?

I'll post the recipe but basically we took the recipe and made it our own. The original was a little spicy for our kids so we cut the spice down a little and added more brown sugar.

Here is the recipe, this was really good. But a little spicy for the kids. So when I made the steaks in the post above I used about 5 tablespoons of this and 1/2 cup brown sugar and mixed them up. Dipped the steaks in this the wrapped in bacon and added a little more to the bacon. IMG_3295.PNG

I really liked it but I love spicy food. My wife ate it and liked and she is middle of the road on liking spicy food.
