Here's my last Traeger smoke before I return this to Abq, NM. This is a 12lb pork butt that I started last night at 2340 hrs.
I started the butt on the smoke setting and 6 hrs later it was only showing 90 degrees. At 0900 I wrapped it in foil and turned it up to 225 degrees, it then cooked for 7 hrs before hitting 197 degrees.
It will sit for an hour and looks good.:) 20161231_160806.jpg 20161231_160810.jpg
