Hmmm...how do I cook this?

    Good morning good evening...whichever it may be. I love smoking a chuck roast but have no idea what this roast actually is. I know what it's labled as, it definitely feels tighter than a chuck roast, but looks like one in a sense and at that price it was definitely happening. Do I smoke it, wrap it, cool it then shred it or do I slice it? Wife doesn't do pink nor red in meat so it'll be taken all the way. It's currently soaking in some spices from a basic homemade rub and will be for the next 36 hours. I wanted to make sure there was flavor since there's not a lot of fat. Will be smoked Thursday. Any ideas are welcome. [​IMG][​IMG]

    Shoulder chuck roast. That just a thick London Broil, pretty untrimmed by the looks of it. It needs to be cooked like a pot roast, low and slow. It wont fall apart like a regular chuck roast, but it will slice up nice.

    Ended up incredibly tasty And it actually did indeed fall apart. Would do one again
