Yep, it's the rise and run that will be difficult. At 8" from the wall, two 45s won't be on the same plane, at least not without at least one additional adjustable tailpiece on the chimney end, and things start to get pretty disjointed looking. It could work. I need to get the tile in, finish the wall, and then I can move the stove into position and start working out the pipe. This chimney is easy to clean from the roof, so I'm not terribly concerned with a bottom clean-out.

You got it. Complicating things is the fact that I have to adapt 6" DVL to a 7" tailpiece coming out the chimney. I'm not sure whether the 6-7" DVL increaser will do the trick: 7'' DVL 6'' to 7'' Increaser - 7DVL-X7 If I went with the rear exit option, the tee would still have 7-9" of space below it, by my rough measuring. What's below is all non-combustible (durock, steel studs, roxul). So, there should be room to remove the cap and attach a bag, but not room to get the soot-eater in there. Still not a deal-breaker.
