Oh…. Try a London Broil but marinate it first in something simple. I did one a while back and marinated it in Apple juice over night then smoked it with Hickory, I wish I'd gotten a picture of that but I had to many… :pete::cheers::drunk::whistle: and forgotten about it! It was even better the next day:drool:

With brisket hitting 6.50 a pound, chuck roasts make a hell of a pulled beef meal.

I just priced choice grade brisket at my local cash and carry for under $4 per pound, if you are paying $6.50 you need to shop somewhere else

Cheap and good are 2 different things when it comes to beef from a store.

I buy a good prime chuck roast before cheap brisket...all day every day. Not to mention, less cook time since they aren't 10lbs.
Mom raised me to be thrifty. Dad sold quality meat for 30 years. Prime grade chuck is a tighazz's way to compromise I guess.

Leftover pulled chuck makes for some great itialian beef btw.

Hard put to find anything "prime" in the stores around here let alone prime grade chuck. I have heard that Costco's sell some prime grade, but i refuse to pay them a membership for the "privilege" to shop in their store

Yea...I live in the city. I'm blessed with a few good butcher shops. Real butchers...not grocery stores.
Junk brisket here is 8 per lb.

Did a whole sirloin tip roast today, 10 pound. A sub primal containing the top and bottom round roasts. Smoked low and slow with mesquite, reached 130 in 4 hours, then crank up the heat to sear

Got a walmart brisket on the BBQ right now. $2 something a pound. We did a lot of them in college, at the time they were in the sub -buck range. That was with a slow cooker. Yeah, it aint the greatest meat. But I've never had someone turn their nose up at it.

That's funny! I have some real butcher's in my town, sane high prices. They buy their meat in large primal cuts from Costco and Sams club. Practically impossible to get exactly what you want anymore from the local butcher. They are limited in supply in most areas. local area slaughter houses are of the past. You'll have to buy your cow direct from a rancher.

I've been a butcher for 35 plus years. Brisket can still be found untrimmed for under $5/lb. As far as chucks roasts go, I think a prime chuck over a choice grade is overkill. A chuck has a lot of grain in it anyway. I've seen some select grades with plenty of fat and grain. And on another note, stay out of the Walmarts , Sams , Costcos.....They are the reason you cant find a good butcher in your area. Shop small, shop local.

Normally i would agree with that statement as I am all for the mom and pop, small business owner. But Costco sell "USDA prime" grade packer briskets for less than $4 per pound, if you catch them on sale they are less than $3. You cant beat that for Prime Grade brisket . That is the number 1 reason I finally renewed my Costco membership after 10+ years of boycotting them their meat selection is awesome
