    Campinspecter had a really good idea for lunch today. Went to a restaurant and had fish and chips. There were no leftovers on my plate!!

    Pesto Parmesan chicken breast

    Dredge the chicken in pesto, then bread with a 50/50 mix of bread crumb and Parmesan with a bunch of dried basil, bake toill the chicken is done, then top it off with some fresh basil leaves, tomato and more parm, and broil

    I love pesto, but DH was raised as that is not proper, only southern italians eat that. Oh well.

    I'm going to bone and roll a couple chickens this weekend and fire up the grill smoker. If it works out well. I'm going to wrap a bunch of them up and freeze them.
    Not sure yet what I want to stuff them with.
    This video is amazing.
